Here are a few of my go-to grocery items that always give me energy and keep my mood high:

Lentil Salad with Feta, Olives & Roasted Peppers
- 1 cup dried lentils (or 1 can, rinsed)
- 2 roasted red peppers, chopped
- 1/4–1/2 cup Kalamata olives, chopped
- 1/4–1/2 cup feta cheese, crumbled
- 1 small red onion, diced
- 1 tomato, diced (optional)
- 1–2 tbsp parsley, chopped
- 1–2 tbsp fresh mint (optional)
- 2–3 tbsp olive oil
- 1–2 tbsp red wine vinegar or lemon juice
- 1 clove garlic, minced (optional)
- 1 tsp dried oregano
- Salt & pepper

Quick Steps:
- Cook lentils until tender (about 20 min), drain & cool.
- Use jarred or roast your own peppers, then chop.
- Toss lentils, peppers, olives, feta, onion, tomato, parsley & mint in a bowl.
- Mix olive oil, vinegar/lemon, garlic, oregano, salt & pepper, then pour over salad and toss.
- Chill 30 mins or enjoy immediately.
Nutrition per serving (about 1 cup): ~250 calories, 12g protein, 8g fiber, and a boost of antioxidants and healthy fats to keep you fueled and satisfied.
